For marinating chicken:
- Chicken Breast pieces
- Curd
- Tandoori masala
- Coriander powder
- Garlic paste
For Gravy:
- Oil/Ghee
- Cinnamon stick
- Cardamom
- Cloves
- Curry Leaves
- Finely chopped onions
- Ginger garlic paste
- Tomato puree
- Chicken Stock
- Coriander leaves
- Mango chutney
- Tamarind paste
- Brown Sugar
Spices:
- Coriander powder
- Garam masala
- Red chili powder
- Curry powder
- Red chili powder
- Turmeric powder
- Tandoori masala
Instructions:
To start with, marinate the chicken with all the mentioned ingredients and refrigerate it for at least 4 hour. If you can marinate the mixture overnight, that will be wonderful! When you wish to cook the dish, start by shallow frying the chicken in the pan. Flip it on both side and brush oil/ghee on the chicken. Once the chicken is tender, keep it aside.
Let’s start with the gravy.
Heat the oil in the pan on the medium flame. Add cinnamon stick, cardamom and cloves at this point along with curry leaves. Once the raw fragrance is dissolved, add the chopped onions along with brown sugar. Let the onion caramelize for 10 minutes.
Now put ginger garlic paste. Once the raw aroma is gone, add all the dry spices along with tomato puree. If the gravy runs dry, you can add little water in the pan. Once the tomato is properly cooked, and you can see oil separating from the gravy.
At this point, add the cooked chicken, and let the gravy cook for next 15 minutes so that chicken can infuse all other flavors of the gravy. Switch off the flame and your recipe of tandoori chicken masala is ready to serve! Serve it hot with rice or roti.
